Sanoviv Medical Institute Recipe: Stuffed Zucchini |
Stuffed Zucchini
(Serves 4)
Ingredients:
2 cups brown rice, cooked
½ cup celery, minced
¼ onion, minced
¼ cup carrots, minced
1 clove garlic, minced
¼ teaspoon unrefined sea salt (Celtic Salt)
1 teaspoon olive oil
Preparation:
- Sauté garlic in olive oil for 10 seconds.
- Add onion, celery, carrots and salt and continue to sauté for 5 minutes.
- Mix with the cooked brown rice.
- Fill zucchini halves and bake for 15 minutes at 350 degrees.
- Garnish with fresh mint and serve.
