Nuts and
seeds also contain "digestive inhibitors" or "enzyme inhibitors" so if
you eat raw nuts and seeds, you can take supplemental enzymes with them
or you can germinate them by soaking them which begins the germination
process and increases the enzyme activity in the nut or seed.
I don't advise roasting or toasting them in the oven as the heat is too high (even on the lowest possible setting) and destroys the beneficial oil in them. Dehydration is best and a simple dehydrator can be purchased at a very reasonable price. I found this one online, but we got the same one at the Bay for a lower price, so check around.

Here's all you do:
Put the nuts or seeds in a bowl and fill the bowl with filtered water. Add 1 tsp. sea salt and stir to mix it in. Let sit on the counter for 24 hours. Strain the water off and then place in the dehydrator for approximately 24 hours or until crispy. You won't believe how delicious nuts are when prepared this way!
Almond, pecans, cashews, macadamia nuts and peants do not go rancid easily and once they are prepared this way will keep for months in an airtight container at room temperature. Walnuts, however, are more susceptible to going rancid and should be stored in the fridge.
