Sweet Potato Cauliflower Soup


Here's another great recipe that I didn't invent.  It was passed on to me by a friend, who no doubt got it from a friend, and so on.  Remember the days when recipes were shared that way on little cards?


There's nothing like a hot bowl of soup on a cold winter day to warm you.  This one has the added warmth of cinnamon.  It's so easy to make and so delicious!


Here's the recipe:

2 tsp vegetable oil (I use olive oil)
2 tsp crushed garlic
1 cup chopped onion
1/2 tsp cinnamon
1/8 tsp pepper
2 cups chopped cauliflower
4 cups vegetable or chicken stock (I use chicken)
3 1/2 cups diced sweet potatoes
1 1/2 tbsp honey (add after cooking so the enzymes aren't destroyed)

Optional garnish:  Sour cream or plain Greek-style yogurt

Sauté the garlic and onion in the olive oil until softened.  When using olive oil, be sure to not get it too hot.

Add the cinnamon, salt, pepper, cauliflower, stock, sweet potatoes and bring to a boil.  Cover, reduce the heat and simmer for 25 minutes or until the potatoes are tender.

Transfer to a food processor and puree until creamy and smooth. Add the honey and stir until its melted in. Thin with stock if desired.  I don't do this as we like our soup nice and thick.
