This recipe came to us from my brother, Keith Berg, and his wife, Jane Houlden. They live in the forest near Mt. Robson, where Keith builds hand-crafted French horns and Jane teaches music lessons. They have two fabulous kids, Erik & Laurel, and they are into eating healthy so they can enjoy hiking in the mountains that surround them. You won't be hungry after this breakfast!
Here's what you'll need:
1 1/2 cups milk (any kind - DF use rice, soy, nut, or hemp milk)
1 1/2 cups rolled oats (for GF use "Only Oats")
2 tsp oil
3 eggs
1 square pressed firm silken tofu
1/2 cup flour (barley or Ezekiel are good, but for GF you may want to use Namaste Perfect Flour Blend, or your own blend)
1 1/2 tsp baking powder
1/8 tsp salt
1 tsp protein supplement (optional)
Soak oats in the milk in the blender for 10 minutes. Add the rest of the ingredients, blend, fry and serve with whatever topping you fancy. Try yogurt and fresh berries, or sauce some frozen berries.
