I eat a healthy diet, that includes lots of vegetables and I don’t eat junk food very often, so what could possibly be wrong with what I eat?

Forbidden Rice


I'm always looking for healthier alternatives to the usual foods we eat.  In this country the rice you usually find, especially in restaurants, is white and high glycemic.  In fact, with a glycemic index of 87, consuming white rice is worse for you than eating sugar right from the sugar bowl!  The glycemic index of table sugar is only 58. In fact, most people don't know that the average GI for whole wheat bread is 71!

Overuse of Antibiotics


There has been much discussion recently about the use or overuse of antibiotics in the meat that we consume.  Researchers say that 80% of all antibiotics used in the U.S. are being used in agriculture, specifically in the raising of poultry and cattle.  A recent report in the New England Journal of Medicine "points to mounting evidence that suggests this flood of antibiotics has produced pathogens that are resistant to the medicines, which means they are immune to treatments when humans are infected."

Vitamin D - Do I Need It?




Don't you wish you could spend the long, dark, cold winter months at the beach in the sunny south? Well, that's a goal of ours for sure. But for now we are here in Canada and, I don't know about you, but I tend to hibernate!

Recent studies have shown that a large percentage of the world's population suffers from a deficiency of Vitamin D.  But vitamin D isn't really a vitamin at all.

The Key to a Strong Immune System


I'm not a couch potato, but I've not been a great one for exercise either.  I've kind of gone at it in fits and starts throughoutt my life.  I know I need it to be healthy, but I never knew what to do.  I've tried going to the gym, but by the time I drive there and have a 1 hours class and drive home, 2 hours of the precious time I have in my day have been used up.  Maybe you can relate.  I also got "post-exercise fatigue" when I had untreated hypothyroidism.  I don't have that anymore, so now I have no excuse.

What's haunted me though is what I read Dr. Michael Colgan say in his book The New Nutrition: Medicine for the Millenium:  "If you don't have time to exercise, you'd better reserve a lot of time for disease!"

Raw vs. Live Foods


When I was at Sanoviv for a week, I learned a lot about how to eat and what to eat to be healthy.  I'd like to share a bit with you about raw food and the nutritional difference that sprouting makes.

Crisp & Delicious Nuts & Seeds


Nuts and seeds also contain "digestive inhibitors"  or "enzyme inhibitors" so if you eat raw nuts and seeds, you can take supplemental enzymes with them or you can germinate them by soaking them which begins the germination process and increases the enzyme activity in the nut or seed.

I would like to share with you what I have learned about how to prepare grains, as I run into so many people who are surprised when I tell them that they shouldn't eat raw grains!

Gluten Sensitivity

I want to address the whole issue of gluten sensitivity, at least from my own experience.  Did you know (I didn't) that you can be sensitive to gluten, and that senstivity could be wreaking havoc on your health, even if you are NOT celiac?
