Date Pralines


I don't know about you but this time of year I struggle with wanting to give treats to my friends, but because I love them, not wanting to give them something that isn't good for their health.  Well, this is totally good for them and they will LOVE it!  I got the original idea from my creative friend, Lee, and I've just modified it a tiny, wee bit.  The other thing you'll love is how absolutely simple it is!


Ingredients:
dark, unsweetened baker's chocolate
whole pitted dates
raw pecans

Set out as many dates as you want to dip in chocolate.  Cut pecans in half lengthwise and stuff the centre of each date with half a pecan.

Melt dark chocolate squares (number of squares depends on how many you want to make) in a large pyrex measuring cup in the microwave.  Short amounts of time, stirring in between, is best.

Using small tongs, while the chocolate is warm, dip each one completely in the chocolate and set on a piece of waxed paper to cool.

To make the version pictured above, omit stuffing the date with the pecan.  Instead dip half the date and roll in a variety of coarsely-chopped nuts.
